The Ultimate Boning Knife
The 5.5″ Boning Knife is the perfect knife for cutting small joints of meat and cutting around small bones. The knife is light to hold and is shaped with a very pronounced upwards curve on the blade. This tapers to a fine point. The handle is shaped to be comfortable being held in a wide variety of grips to eliminate the risk of straining your hands while working. The sharp edge provides the ability to slice through tough meat with ease.
In 2019, we had the honour of working with Masterchef: The Professionals winner and the year’s National Chef of the Year winner Steve Groves, to design a bespoke knife for him. Steve wanted to create the perfect boning knife – a challenge we were delighted to accept. Steve’s knife was nicknamed ‘The Roux’ after the restaurant in London where he is Head Chef. We now use the result of our collaboration as our small boning knife. The Handle is made from Chacate Preto wood and has a grey liner for a beautiful classic look. The Handle is strong and smooth to the touch with a beautiful deep lustre.
As with every Savernake Knife, the 5.5″ Boning Knife features our trademark concave blade, expertly blended into a tapering convex cutting edge. The blade’s concavity allows the knife to have both a sturdy spine and a cutting edge best measured in microns. It also removes excess weight and encumbrance from the side of the blade. We use 60 HRC Sandvik 14c28n Stainless steel which gives our knives the perfect level of sharpness and durability rated in the top 2.5% in the world.
The 5.5″ Boning Knife comes complete with a sheath made from Richlite that protects the blade when not being used.

To ensure the safety and well being of our small team of knife makers we have implemented additional measures in our workshop to enable us to continue to make custom knives and accessories. The need for us to minimise the number of people in any one area of the workshop at any given time – plus ensuring all knives are sanitised prior to posting – means that our average lead time is currently around 4 to 6 weeks.
