Tasked with creating a Chinese cleaver that could be used as a master knife, we created a knife that’s as comfortable cutting through big chunks of meat as it is with more delicate tasks. The bottom inch of the three-inch deep blade is almost parallel and under 1mm thick, so that you get all the power with none of the heft. Simply change your grip to slice through bone, chop, dice or perform more delicate tasks.
