We’re very lucky indeed to count Matt Worswick, Executive Chef at the Savoy Grill amongst our many loyal customers. Matt earned his first Michelin star at the age of 26 and went on to win another star at the Surrey-based Latymer where he was head chef for three years, before leaving to take up his role at Gordon Ramsay’s Savoy Grill on the Strand in London.
Matt has commissioned us to make him a number of knives over the years, all with his trademark pink handles – and this trio make up the most recent additions to his knife set.
Our Tom Aikens knife needs little in the way of intro. Designed in collaboration with renowned chef Tom Aikens, the youngest chef to win two Michelin stars, the knife was based on the design of our eponymous Savernake Knife, but we increased both the length and depth of the blade to give it additional heft combined with scalpel-like precision. The nose was dropped to make the blade more of a ‘slicer’, and the bolster end of the handle was altered to allow the hand to slide up into a pinch grip when greater precision is required.
The longest blade of the three, our Pip’s Carver was designed for Great British Menu chef and chef patron of London-based Hicce, Pip Lacey who was looking for a knife that she could use to both carve and prepare fish, but was struggling to find one that had a handle that was comfortable enough to use for hours in the kitchen.
And so we made her this knife and were – in our usual modest way – quite pleased with how it turned out, sufficient to want to offer it to other folks out there with the same conundrum. With just the right amount of flex, and kept razor sharp, this knife is perfect for all those tasks where a conventional, straighter carving knife isn’t the answer; preparing a large gammon, filleting a splendid salmon or breaking down a large rack of beef ribs.
Finally, the diminutive but highly dextrous Nimble Chopper completes the line up. Made for herbs and veg, while serving effortlessly as a utility blade, the Nimble Chopper is a companion for those who prefer a smaller, lighter knife. A small version of the excellent Nakiri design school, it’s lightweight and compact and therefore also perfect for dicing, garnishes and fruit. Absolutely one of our favourite blades and a true kitchen stalwart.
All three knives sport custom contoured handles made from highly durable pink G10, a fibreglass material that is a devil to route and finish but which works brilliantly well within a commercial kitchen environment. We added a 1mm black liner and custom black resin pins to really make the pink pop. Definitely no chance of these blades being ‘accidentally borrowed’ without the owner noticing their absence!

As with every Savernake, the Worswick Trio features our trademark concave blades, expertly blended into a tapering convex cutting edge. The blade’s concavity allows the knife to have both a sturdy spine and a cutting edge best measured in microns. It also removes excess weight and encumbrance from the side of the blade and is – in short – the business.

To ensure the safety and well being of our small team of knife makers we have implemented additional measures in our workshop to enable us to continue to make custom knives and accessories. The need for us to minimise the number of people in any one area of the workshop at any given time – plus ensuring all knives are sanitised prior to posting – means that our average lead time is currently around 4 to 6 weeks.
- Every Savernake product is made to order. The quest for perfection takes time, so in normal circumstances please allow 3-4 weeks for your order to arrive (see below for Gift Boxes, Cards & Panic Department).
