OUR TAKE ON A KITCHEN KNIFE MAINSTAY – BEAUTIFUL AND MADE TO YOUR SPECIFICATIONS
Every new chef begins with a full roll of cooking knives, but soon settle on the one knife that they use for most of their work. The shape and form and range of these professional kitchen knives fascinates us, and we have developed the Core range to meet this need.
All of our Core kitchen knives are based on existing designs, but are made to order. This allows us to offer a range of finishes, handles and engraving options – all for the same price. The simple purchasing process will help you make your choices, but if you would like a different wood, or a matching set or images in your engraving then please get in touch.
We only offer a dozen knives here, but each one has been developed, trialled and used to fulfil the particular preferences of the chef: from the substantial Brawny Chef knife through to our Nimble Chopper, there’s something for everyone.
The Hollow Grind
Setting us apart from almost any other chef’s knife – the hollow grind makes for a lighter blade with an astoundingly refined cutting edge. The perfectly concave profile allows for the blade to slice with amazing ease and precision, and is almost exponentially easier to sharpen than a traditional flat grind.
Steel and Edge
All of our chef knives are made from the fantastic Sandvik 14c28n, selected for its amazing sharpness and edge retention. Our knives are hand-sharpened at a 20º angle and taken up to 6,000 grit.
Because of the very special way we form our kitchen knives, we need to transition from a perfectly flat handle to our distinctive hollow blade profile. The chine, or ridge, that marks this delineation is one of the many ways our knives stand out in the crowd.
Traditionally leather was often used to assist with the bond between the metal and the wooden handle. Material technology has moved on since then, and we now use a range of colours from G10 layered resin.
For real dexterity and accuracy it’s often important to be able to use the full length of the handle, in either a conventional or pincer grip. Our characteristic finger nook offers superb comfort and flexibility.
We offer a carefully curated selection of stabilised and unstabilised woods for you to choose from. We can of, course, offer even greater variety if you’d like to get in touch and discuss what you’re after.
We feel that glossy blades look cheap, show scratches easily and are two-a-penny. We offer a tumbled option for those who like something different, but our brushed finish took a very long time to perfect and looks stunning.
While working hard to maintain a consistent design aesthetic across our Core kitchen knives, the handle shape has been individually tailored to each blade. For all preferences in grip the seductive curves of our handles will fit the bill.
