DukesHill have cured meat to a very high standard since 1985, and they hold a royal warrant. For the late Queen’s Platinum Jubilee in 2022, they asked us to make a commemorative carving set.
It is three pieces: a carving knife, a fork and a honing steel. The knife follows a particular shape we had been circling for years, a long, gentle slope to the edge and a soft, non-aggressive tip, the kind of blade that does justice to anything from a full ham to a delicate rolled shoulder of lamb.
The handles are English walnut, our favourite wood, distinctly British and elegant without trying to be. The set carries a Jubilee engraving, and the honing steel takes a royal purple in keeping with the occasion. We made a presentation box for it that was sent to Buckingham Palace.
What we did not do was overcomplicate it. There are no gimmicks. It is a simple, properly made set to mark a moment, which is exactly what an occasion piece should be.
Some knives are made to be used. This one was made to be kept.
