The Story
The fourth time a chef came to us asking to remake his beloved, but now sadly rather distressed, pastry knife, but with proper steel (and a lovelier handle) we thought we might as well take the plunge and make a production version. And so here we are – a knife that’s as archetypal as the paring knife and the European Chef’s knife; suitable for tackling everything from those huge roasts (that take two people to extract from the oven) to deftly taking slices from a Beef Wellington, and all points in between.
Performance
CATRA – the global authority on cutlery performance – rank our knives in the top 2.5% of all blades ever assessed for initial sharpness and edge retention. The Chef’s Carver is hardened in-house to 60 HRC using a nitrogen atmosphere process, taking the steel from 1080°C to -75°C in a controlled cycle that maximises carbide formation, edge stability and corrosion resistance. The blade is ground to a unique concave profile – a geometry that reduces drag and improves slicing performance without sacrificing rigidity. Each knife is sharpened to 15 degrees per side.
