Our take on the classic filleting knife is engineered to slice meat and fish wafer thinly, with a slender blade you can direct with ease.
We’ve ensured just the right amount of flexibility for skinning, running along ribs, working delicately with poultry, and finding the precise line through a fish. Along with a boning knife, it’s an essential tool for home (and professional) butchery.
This is result of many hours of work to create a blade with perfect amount of flex, but that would still hold a lovely edge. This resulted in a lot of broken blades and gnashing of teeth, but we got there in the end – and we’re very glad we did.
Each custom blade is made from scratch using a unique combination of aerospace technology and hand craftsmanship, resulting in a blade geometry that’s exclusive to Savernake—delivering unparalleled edge quality in knives that are lightweight, perfectly balanced, and best in their class.
