The Story
Someone wanted the Classic, just a little bigger. We added a centimetre to the length, half a centimetre to the depth, and roughly two millimetres all round to the handle profile. The result was a completely different knife. That was instructional. Small differences make a big difference in blade character, and understanding that has shaped how we approach every knife in the range since. The Classic Ultra has been very popular from the start, and we suspect it is because it occupies the sweet spot that most medium chef’s knives aim for and miss.
Performance
CATRA – the global authority on cutlery performance – rank our knives in the top 2.5% of all blades ever assessed for initial sharpness and edge retention. The Classic Ultra is hardened in-house to 60 HRC using a nitrogen atmosphere process, taking the steel from 1080°C to -75°C in a controlled cycle that maximises carbide formation, edge stability and corrosion resistance. The blade is ground to a unique concave profile – a geometry that reduces drag and improves slicing performance without sacrificing rigidity. Each knife is sharpened to 15 degrees per side.
