The trimming and breakdown knife in the BBQ range. Pulling silver skin off a brisket, working a fat cap, deboning a shoulder, getting between ribs, cleaning up an aged cut. The work nobody photographs and nobody can do without. Semi-rigid as standard: flexible enough to follow curves, stiff enough at the tip for tendons and close bone work.
The boner is a knife we have made in various forms since we started, and the 5″ is the one we settled on as the daily-driver: long enough to do real work, short enough to stay in control. The strongly curved profile follows bones and joints, finding the line through connective tissue without forcing. Used in dagger, conventional or reverse grip, depending on what you are working on.
The kitchen version of this blade sits on a wooden handle. The BBQ ’26 version doesn’t. The boning knife is the knife that micarta was made for. Hunters and butchers have specced phenolic-laminate handles on their working blades for almost a century, because the material does the one thing wooden handles cannot: it holds grip when covered in blood, fat, brine or rain. Invented by George Westinghouse in the early 1900s for electrical insulation, picked up by the trades that needed a handle to outlast the blade. Putting it on a boner is not innovation. It is recognising what the rest of the world already worked out.
This is the knife in the BBQ range where the handle change matters most. Boning is grip work; the moment the handle slips, the knife goes somewhere you did not intend it to go. Micarta solves that problem in the only way that lasts.
The 5″ Boner BBQ ’26 is made from Sandvik (Alleima) 14C28N, a modern Swedish stainless steel, hardened in-house to 60 HRC using a nitrogen atmosphere process. The heat treatment takes the steel from 1080°C to -75°C in a controlled cycle that maximises carbide formation, edge stability, and corrosion resistance.
The blade is concave ground to 0.3mm thickness at 1mm from the edge. This geometry reduces drag through dense produce and improves slicing performance without sacrificing rigidity. Every Savernake knife is sharpened to 15° per side.

Washing
Wash by hand and dry immediately. The steel handles dishwashers, but the handle materials don’t, and the blade will dull faster regardless. Ten seconds at the sink is the right habit.
Day-to-day maintenance
A honing steel realigns the edge between sharpenings. Two or three passes per side before heavy use is enough. You don’t need to do this every time – just when the blade starts to feel less certain.
Sharpening
We offer complimentary workshop sharpening once a year for the first three years. After that we sharpen at cost. If you prefer to sharpen at home, our blades are ground to a 15-degree bevel – specify this if you use a third-party service, as most sharpen to 20 or 22 degrees as a default.
Storage
A magnetic strip or knife roll is ideal. Loose in a drawer accelerates dulling and risks chipping the edge. If a drawer is the only option, a blade guard solves both problems.
Handle care
Micarta handles need nothing beyond normal washing. They do not require oiling and are unaffected by moisture. Composite handles need nothing beyond normal washing.
