The Story
We called it the Classic because we wanted to design a classic chef’s knife, and this is what came out, and clearly we weren’t thinking very originally the day we named it. It tends toward the smaller side of medium, which is intentional: most people who think they want a big chef’s knife find, after a week, that they actually wanted this. It will carve a chicken, dice carrots, and get into a turnip without complaint. If you’d like to hop over the medium point and go very slightly larger than medium, have a look at the Classic Ultra.
Performance
CATRA – the global authority on cutlery performance – rank our knives in the top 2.5% of all blades ever assessed for initial sharpness and edge retention. The Classic is hardened in-house to 60 HRC using a nitrogen atmosphere process, taking the steel from 1080°C to -75°C in a controlled cycle that maximises carbide formation, edge stability and corrosion resistance. The blade is ground to a unique concave profile – a geometry that reduces drag and improves slicing performance without sacrificing rigidity. Each knife is sharpened to 15 degrees per side.
