The Story
Getting the right flex on a blade that will also hold an edge at our hardness is genuinely difficult. We went through a lot of failures before we got there, and the resulting knife is better for it. We sell it to fishermen with a small leather case; they use it for impromptu sashimi on the boat. The handle is not too large, moves comfortably in the hand, and has a finger guard so your hand does not slide. It does what a good filleting knife should do, and we are proud of it.

The Long Filleter is hardened in-house to 60 HRC using a nitrogen atmosphere process, taking the steel from 1080°C to -75°C in a controlled cycle that maximises carbide formation, edge stability and corrosion resistance. The blade is ground to a unique concave profile – a geometry that reduces drag and improves slicing performance without sacrificing rigidity. Each knife is sharpened to 15 degrees per side.
